Sous Chef
General role: Sous chef and assistant manager in a fast paced, highly organized kitchen.
Employment: Full Time Seasonal
Essential Duties and Responsibilities:
- Prepare high quality food items by following recipes as well as presentation guidelines
- The active ability and knowledge to work all stations, recipes, prep lists, and kitchen duties
- Directly supervises/delegates all food production
- Taste everything every day to ensure quality standards
- Provides training/guidance to all kitchen staff members including, but not limited to, cooking, food preparation, and plating procedures
- Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
- Plan staff scheduling, execution, and performance to meet the Rustler expectations
- Ability to always remain calm and lead the staff to success in all kitchen and food details
- Participate in kitchen administration, menu development and recruitment
- Ensure sanitation and safety programs are closely followed
Qualifications:
- Prior kitchen management experience
- A professional culinarian with first class knife & culinary skills
- The ability to cook delicious food
- Excellent understanding of various cooking methods, ingredients, equipment, and procedures
- Planning, problem solving, decision-making, leadership, and teamwork skills
- Accuracy and speed in executing tasks
- Strong/efficient written, verbal, and interpersonal communication skills across all departments
- Self-motivated, with both positive mental and physical stamina
- Organized & efficient on-time, time management
- Positive can do, get it done attitude
- Must be able to obtain a valid Serv Safe Manager Certificate
- Must be able to stand, bend, stretch, lift, and carry heavy materials
Work Schedule
- Breakfast shift: 6:15 am – 3 pm, Middle shift 12-9 pm. Dinner shift: 3pm – 11pm
- Exact hours vary based on lodge capacity, weather, and staffing.
- Some ski time available most days depending on shifts.
- Weekend and Holiday work required.
- No vacation as this is a seasonal position.

Baker / Pastry Chef
General role: Organize and execute baking needs for a restaurant.
Employment: Full Time Seasonal
Essential Duties and Responsibilities:
- Plan & prepare consistent, great tasting, visually appealing made-from-scratch breads, pastries, and desserts served daily at breakfast, lunch, après ski, and dinner according to approved/successful recipes
- Skilled in various forms of baking production & equipment operation
- Ensure the proper HACCP handling and labeling of food
- Maintain organization, cleanliness, and sanitary conditions of kitchen areas
- Manage inventory levels for both raw and production materials
- Successfully direct and oversee subordinate staff
- Assist chefs as necessary
Qualifications:
- Similar prior baking experience

Baker's Assistant
General role: Support head baker in producing baked goods for lodge.
Employment: Full Time Seasonal
Essential Duties and Responsibilities:
- Assist the baker in the preparation of made-from-scratch breads, pastries, and desserts served daily at breakfast, lunch, après ski, and dinner according to approved/successful recipes
- Safely and appropriately use baking and measuring tools/equipment/appliances to complete all steps in the baking process
- Ensure the proper HACCP handling and labeling of food
- Maintain organization, cleanliness, and sanitary conditions of kitchen areas
- Assist chefs and kitchen staff as necessary
- Follow both written and verbal directions
Qualifications:
- Prior kitchen experience

- Efficient time management
- Great teamwork skills and attention to detail

Kitchen Receiver / Storeroom Manager
Employment: Full Time Seasonal
Essential Duties and Responsibilities:
- Help manage food shipments
- Unload, sort, and put away food shipments
- Ensure that all food is put away in a correct and organized way
- Interact with food purveyors to manage shipments and ensure orders are delivered correctly
- Perform additional tasks as assigned by management

- We receive two shipment a day (Wednesdays & Sundays off) schedule can be manipulated
- Some ski time available most days depending on shifts, but not guaranteed

Dishwasher
Employment: Full Time Seasonal or Part Time Seasonal
Essential Duties and Responsibilities:
- Scrape and sort dishes before loading them into a dishwashing machine for cleaning
- Monitor dish machine water temperature and detergent levels
- Unload dishwashing machine and properly put away utensils and dishes
- Sweep and scrub kitchen floors to ensure a clean and safe work area
- Bag kitchen trash and transport to the dumpsters, maintaining the cleanliness of this area as well
- Assist in the preparation and serving of food as may be required
- Stock supplies such as food items and utensils in kitchen and storage areas
- Maintain dishwashing machine and report any mechanical faults to supervisor
- Stock and arrange kitchen utensils and dishes in the existing organization and locations
- Handle glassware and other fragile tableware to prevent breakage
- Execute daily chore lists and duties
- Perform additional tasks as assigned by management
